Dreamy Double Chocolate Chip Cookies

These Double Chocolate Cookies are HEAVENLY!

Not too sweet, with the perfect amount of gooey melted chocolate with an overall rich and dynamic chocolate flavor.

Ingredients:

2 Sticks + 2 Tbs unsalted butter (melted) (255 g)
3/4 cup cocoa powder
1 cup (220 g) light brown sugar packed
1 cup (200 g) granulated sugar 
2 large eggs
1 Tablespoon vanilla extract 
2 cups all purpose flour (250 g)
1 teaspoon baking soda 
1/2 teaspoon salt
2 cups semi-sweet chocolate chips (473 g)

Directions:
Preheat oven to 350 degrees Fahrenheit

While oven is heating, get dough prepared.

In a bowl with a hand mixer, slowly mix melted butter with cocoa powder. This will rehydrate the cocoa powder.

Add in sugars and mix until fully combined and a sandy texture. Add in eggs and vanilla and mix until smooth (2 minutes)

Add dry ingredients (flour, baking soda and salt) and mix until combined. I switched to a rubber spatula for easier mixing! Once combined, fold in chocolate chips.

Scoop 4 ounce dough balls (1/3rd cup of dough) bake for 12-13 minutes and let cool on cookie sheet for 10 minutes!

Cookies will have a slight crisp on them with a gooey center!
