Gimme S’MORE Cookies
I’m calling this one Gimme S’MORE!
This Graham cracker dough is SOOOO TASTY and the perfect base for these ooey gooey s’mores cookies!
Filled with chocolate chunks, crunchy M&Ms and topped with melty marshmallow, these cookies feel like the perfect taste of summer wrapped into a single bite!
Make sure you read the recipe, they require a little tlc but are pretty straight forward once you get started!
They are WORTH it, I promise! Once you make these, you won’t look back, and hey they might just become your favorite cookies! 🔥
Gimme S’MORE 🏕
Ingredients:
- 3/4 cup unsalted butter, room temp (170g)
- 3/4 cup packed brown sugar (161g)
- 3/4 cup granulated sugar (150g)
- 2 large eggs
- 1 teaspoon vanilla
- 5 ounces graham cracker crumbs (typically 1 full sleeve or 142 g)
- 1 3/4 cups all-purpose flour (245g)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups (12 ounces) chopped chocolate
- 1/2 cup marshmallow fluff (50 g)
- 1 cup mini marshmallows (60g)
- 1 cup M&Ms (200 g)
Directions:
Preheat the oven to 350 degrees Fahrenheit and line a cookie sheet with parchment paper.
- In a bowl with a hand mixer (or the bowl of a stand mixer) whisk butter until fluffy. Add in sugars and mix until combined.
- Add vanilla and eggs and whip until light and creamy (roughly 2 minutes)
- Add in Graham cracker crumbs, flour and baking soda. Once dough forms, mix in chocolate chunks and M&Ms.
- Form into 3.5 inch dough balls, this recipe will make 13 large cookies
This is where it gets fun!
- Bake for 8 minutes, and take out of the oven. Once out of the oven, carefully pipe marshmallow fluff on top and place a few mini marshmallows on top.
- Bake again for 3 additional minutes and take out to cool. This will melt the fluff and let the marshmallows get gooey
