Gingerbread Snickerdoodles

Small batch Gingerbread Snickerdoodles 🤎
These cookies are the epitome of the Holiday Season *chefs kiss*
With a crisp edge, chewy center and rich depth of flavor, these snickerdoodles are the perfect combination of sweet and filled with the perfect sprinkling of spice.
They are super simple and will make your home filled with holiday cheer!
Ingredients:
Cookie Dough:
- 3/4 cup unsalted butter (softened)
- 1/2 cup light brown sugar
- 1/2 cup sugar
- 4 Tbs molasses
- 1 egg
- 2 tsp vanilla extract
- 2 1/4 cup flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 tsp ground ginger
Cinnamon sugar mix:
- 1/2 cup sugar
- 4 tsp ground cinnamon
Instructions:
Cream together with stand mixer or hand mixer butter and sugar. Mix for about 2 minutes until fluffy and smooth.
Add in egg, vanilla and molasses and mix until combined. Add in dry ingredients (flour, baking soda, spices and salt) and mix until combined and a soft dough is formed.
Form into 9 (3 ounce) dough balls. Roll each ball into cinnamon sugar mixture until fully coated and place onto parchment paper lined cookie sheet.
Bake at 350 for 14 minutes, let cool on tray for 10 minutes before serving!
